Double crust pastry:
2 c. sifted flour
1 tsp salt
1/2 c. salad oil such as Wesson's
1 /4 c. cold milk.

Filling:
6 c. apples (pared, thinly sliced)
1 c. sugar
2 T. flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. salt
2 T. butter or margarine.

Directions:
Pastry: Mix flour and salt. Pour oil and milk
into one measuring cup. Add all at once to
flour. Stir until mixed. Press into smooth ball.
Cut in half. Flatten slightly. Place one half
between two sheets of waxed paper. Dampen
table top to prevent slipping. Roll out gently to
edges of paper. Peel off top paper and fit
pastry into pan. Add filling. Then take
remaining dough, roll out and cut with
scissors into strips. Place lattice-fashion over
pie.

Filling: Combine dry ingredients and either
coat apples or sprinkle dry ingredients over
top of apple slices. Put into pastry-lined pan.
Add bits of butter. Cover with top crust and
bake at 425º for 35-45 minutes. Juice should
be beginning to solidify and apples look a bit
transparent. This pie is much better eaten the
same day it is baked. You can make it the
night before, cover with aluminum foil, and
place in refrigerator. On day of serving, place
in preheated oven and bake. It will be just as
good. This is scrumptious made with green
apples.

I usually use Rome or Gala apples but any tart
green apple will be successful. Everyone in
my family makes this pie, including the men!
