1 tsp. olive oil
4 cloves garlic, minced
1 tsp. paprika
1 tsp. cumin
1 tsp. ginger
1 tsp. corriander
3 c. carrots
1 c. water
3 tbsp. lemon juice
1/4 c. parsley
salt to taste

Directions:
Directions:
Heat oil in a pan over medium heat, add ginger, paprika, cumin and corriander. Cook, stirring until fragrant but not browned, about 20 seconds. Add carrots, water, lemon juice and salt. Bring to a simmer. Reduce heat to low, cover and cook until almost tender, about 5-7 minutes. Uncover and simmer, stirring often, until the carrots are barely tender and liquid is syrupy, about 2-4 minutes. Stir in parsley, serve hot.
