1 to 3 fresh serrano peppers, chopped
2 large tomatoes, chopped
1 large onion, chopped
olive oil
2 lbs. pork loin, cut into 1/2 inch cubes
1 chicken, cut up
2 c. uncooked rice
salt and pepper to taste
1 lb.fresh shrimp, peeled
6 oz. green peas
1 2 oz. jar pimentos

Saute peppers, tomatoes, and onions in oil till onion is clear. Move to one side, add pork and brown, push to one side. Add chicken and brown till well done. Spread everything in paella pan and put rice, water, salt and pepper, and shrimp. Sprinkle liberally with saffron. Cook till well done covered. Garnish with peas and pimentos.
