2 filets of salmon
1/2 c. chopped olives (green and black, mixed)
2 cloves chopped garlic
1 tomato, chopped
2 tsp. capers

Almond Parmesan Couscous:
1 box Parmesan Couscous (found in the rice section of the grocery store)
1 clove garlic, minced
1/2 c. slivered almonds
1 tsp. olive oil.

Directions:
Place salmon in a lightly sprayed baking pan. Preheat oven to 350º F. Chop garlic, tomato, and olives. Spoon items over the salmon, add capers. Bake for about 15 minutes (or until the center is opaque and the edges are browned slightly). Serve with almond parmesan couscous

Almond Parmesan Couscous
In a small pan, heat oil over medium-high heat. Add garlic and almonds, saute until almonds are barely browned. Set aside. Prepare couscous according to directions on the package. Stir in almonds and garlic when ready to serve.
