1 c. biscuit mix
1/2 c. vegetable oil
1/2 tsp. salt
1/2 tsp. marjoram
1/2 tsp. chopped parsley
1 clove garlic, minced
1 small onion, chopped
3 c. thinly sliced zucchini
1/2 c. grated Cheddar cheese
1.2 c. grated Parmesan cheese

Beat eggs thoroughly. Blend in biscuit mix, oil, salt, and herbs; beat well. Combine with remaining ingredients and pour into a greased 10-inch pie pan. Bake in a preheated 350º oven for 35-40 minutes. Cool at room temperature 10 minutes before serving.
