4 fillets of firm textured white fish
2 T. grated onion
1 T. finely chopped celery
4 T. olive oil
4 slices toast, cubed or 2 c. Pepperidge Farm stuffing mix
1 T. chopped parsley
1 Lemon, juiced
Grated rind of 1/2 lemon (lemon zest)
Freshly ground black pepper
Dash nutmeg
Paprika & margarine

Directions:
Directions:
Saute onion and celery in oil. Mix in bread, parsley, lemon, pepper and nutmeg. Place 2 fillets in bottom of oiled baking dish. Spred dressing over fish and top with remaining 2 fillets. Dust with paprika, dot with margarine and bake at 375 for 20 minutes or until fish flakes easily with fork. 365 calories/serving.
