6 boneless skinless chicken breasts
1/2 c. flour
2 eggs, well beaten
1/4 c. olive oil
1/4 c. white cooking wine
2 limes, juiced
2 T. fresh cilantro, finely chopped
1 T. margarine
2 T. flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. chicken broth

Pound chicken to about 1/4 inch thick. Coat chicken with flour and dip in beaten egg. Heat oil and add chicken. Cook until golden brown on both sides.. Remove chicken and drain any excess oil. Melt margarine in warm skillet and add 2 T. flour until makes a smooth paste. Add wine slowly, using wire whisk to prevent lumping. Add lime juice, cilantro, chicken broth, salt & pepper. Continue whisking to prevent lumping and make a smooth sauce. Simmer gently a total of 10 min. Add chicken to skillet and warm thoroughly. Serve warm with garlic rice and salad.
