1 lb. lean ground beef
1 can white hominy, drained
5 oz. can enchilada sauce
5 oz. water
2 c. cheddar cheese, grated
Plain corn chips
Salt & pepper to taste

Directions:
Directions:
Brown meat in skillet. Add salt & pepper. Drain fat. Add hominy to meat. Stir. Add enchilada sauce & water. Heat for a few minutes. In a greased casserole dish, layer meat mixture, 1 cup cheese, and chips. Repeat with remaining 1/2 of meat mixture & cheese. Bake at 325º for 30 minutes or until it bubbles.
