1 1/2 lbs. ground sirloin
1 can (14oz.) diced tomatoes, undrained
1 pkg. taco seasoning mix
2 pkg. (5oz.) yellow rice mix
1 1/2 cups mixed Mexican cheese, grated
1 can (10 oz.) diced tomatoes and green chilies, undrained
1 bag (10oz) Tortilla chips or Fritoes, crushed

Topping: Shredded lettuce, chopped onions and tomatoes.

Lightly brown meat in large skillet and drain. Add taco seasoning and liquid as directed on taco package. Simmer 5 to 10 minutes.

Cook rice according to directions on package.

In large bowl, microwave cheese until melted, stir in tomatoes and green chilies, mix well. Add ground beef mixture and cooked rice. Pour into greased 9' x 13' casserole dish. Sprinkle with crushed corn chips.

Bake 400 degrees 10 to 15 minutes or until bubbly.

Cover with toppings. Serve with sour cream if desired.
