4 artichokes
3 tbsp liquid crab boil
1 tbsp cooking oil
3 tbsp parmesan cheese

Hollandaise Sauce:
2 tbsp butter
6 egg yolks
1/2 lb crab meat (white)
3 tbsp lemon juice
1 tsp salt
1 pinch cayenne pepper

To steam artichokes, place them in large pot with a steam tray. Add crab boil and water halfway to artichokes. Sprinkle oil over artichokes then sprinkle cheese. Boil until water steams down for about 1.5 hours.

Hollandaise Sauce: Mix butter, egg yolks, crab meat, lemon juice, salt and cayenne pepper in a sauce pan. Cook on low heat stirring constantly until thickened (about 35 minutes). Dip artichoke leaves in sauce. Yum, yum, yum!!!!!
