Spinach Feta Quiche
1 Pie Crust (frozen is fine)
1 Box Frozen Chopped Spinach
1 Small jar of roasted red peppers
4 oz feta cheese
3 TBS of Romano or Parmesan cheese
3 Large Eggs
pinch of salt
1 cup heavy cream
cup milk

Thaw Spinach and drain well
Drain & chop jar of red peppers
Mix eggs with heavy cream, milk and salt
Pour veggies (spinach & red peppers) in pie crust
Crumble of the feta and of the Parmesan cheese over the veggies
Pour the egg mix (eggs, heavy cream, milk) on to the veggies
Add remaining veggies
Add remaining cheese

Bake at 375 degrees for 1 hour to 1-1/4 hours (check at 1 hour) Bake until blade comes out clean.
