Cake;
1 c fresh beets
1 c nuts
1 c crushed pineapple
2 1/2 c flour
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 1/2 c oil
3 eggs
2 c sugar
1/2 c cottage cheese
2 tsp vanilla
Frosting;
1 tbsp corn syrup
1 c sugar
1/2 c sour cream
1 tsp baking soda
1/2 c butter
milk
1 stick butter
1 tsp vanilla
Directions:
Directions:
Set oven 350º. Bake in 9x13 " greased and floured pan for 40 to 50 minutes. Grate beets, chop nuts, drain pineapple. Sift together flour, baking soda, salt, cinnamon. Beat well with mixer oil, eggs, sugar and slowly add dry ingredients. Add beets, nuts, cottage cheese and vanilla.
Frosting:
Cook over low heat 5 minutes stirring constantly. Cool a few minutes. Pierce cake with fork all over when cake is taken out of the oven. Pour frosting over cake.
