1 chicken
1 onion
Garlic

SAUCE:
1 onion, chopped
1 clove garlic, minced
3 T tomato sauce
1/2 - 3/4 can chicken broth (using the chilies can)
Salt

TAMALES:
Masa dough
Corn husks
1 large can Ortega whole chilies, torn into 1/2" wide strips
Jack cheese, optional

Directions:
Directions:
CHICKEN: Cook in water to cover with onion and garlic until chicken is tender. Remove and save broth. Discard all skin and bones. Shred chicken meat into 1/2" thick pieces.

SAUCE: Saute onion and garlic in a frying pan. Add tomato sauce and chicken broth. Salt to taste; add chicken to sauce and simmer for 20 minutes.

TAMALES: Spread masa dough over a corn husk. Lay a 1/2" wide strip of the Anaheim chili in center of masa. Add a small amount of chicken in the sauce and fold up. May also add a small strip of jack cheese, if desired.
