4 eggs
3 c sugar
1 tsp nutmeg
1 tsp cinnamon
1 tsp salt
1 c cooking oil
1 c pumpkin
3 c unsifted flour
2 tsp baking soda
2/3 c water

Directions:
Directions:
Preheat oven to 350º. Beat eggs and gradually add sugar and spices into mixing bowl. Add cooking oil and pumpkin to the mixture. Combine flour and baking soda and add alternately with water to mixture.

Grease and flour 4 small loaf pans (8 1/2" X 4 1/2"). Fill pans 1/2 full with mixture.

Bake for 45 minutes. Check after 45 minutes with a tooth pick to see if it is done. If not baked, bake for five more minutes.

Pumpkin bread makes a great gift during the holidays. I buy the mini foil loaf pans. You can make 8 mini-loaves with this recipe. Reduce baking time to 30-35 minutes.
