3 T. Olive oil
3 Cloves chopped garlic (or a T. if the bottled type) (I like LOTS of garlic as you can see!)
1 Medium Spanish red onion
1 ½ lb. Ground meat
¾ Can tomato paste
1 T. Worcestershire Sauce (Lea and Perrins)
1 T. Soy sauce
½ tsp. Salt
½ tsp. Sugar
½ tsp. Red pepper flakes
¾ c. Raisins
1 tsp. Dried basil
Salt and pepper to taste

Directions:

Heat olive oil in skillet with medium heat and sauté the garlic until fragrant but not burnt (about 1 minute).

Add the onion and sauté until slightly translucent.

Add the ground meat and mix well so that the meat doesn't’t clump together as it cooks.

When the meat is not pink anymore, add the tomato paste, Worcestershire sauce, soy sauce, salt, sugar, and red pepper flakes.

At this point, the meat will be very moist and not dry like the traditional style which uses fresh chopped tomatoes and not tomato paste. (The paste gives it that extra zing!)

After the meat is cooked, adding the rest of the ingredients takes no time at all, ~5 minutes.

Add the raisins, basil, and mix. Add extra salt and pepper to your liking. Enjoy! This dish is usually served with rice, fried egg sunny side up, and fried plantain. (or just rice).
