1 lb blackeyed peas
1 onion chopped
1 stalk celery chopped
1/3 pimento pepper chopped
3 cans chicken broth
1 bay leaf
1/4 lemon squeezed
1/4 tsp garlic salt
1/2 tsp beau monde or celery salt
salt & black pepper to taste
1/3 c chopped ham
1/2 c chopped canned tomatoes

Directions:
Directions:
Soak peas overnight, drain & wash. Saute' onions, pepper & celery in 3 T oil or bacon grease. Add seasonings, tomatoes, broth, & 2 c water. Heat then add peas, lemon juice & ham. Bring to a boil & then simmer for 4 hrs.

This is our family's favorite blackeyed pea recipe and a tradition on New Years day.
