4 oz. Salmon fillets (skinned).
2 T. Finely grated pecorino cheese.
4 T. Fresh pesto sauce.
Juice from two squeezed lemon.
3 T. Fresh white breadcrumbs.
Salt & pepper to taste.
1 Baking tray.
Directions:
Directions:
Pre heat oven to 400 degrees.

Mix 1/3 of breadcrumbs with all of pesto in a small bowl, and spread over fish fillets..

Mix 1/2 of cheese with remaining breadcrumbs and scatter over fish fillets.

Finish off with remainder of cheese.

Reduce oven temp. to 375 degrees.

Add salt, and pepper to taste.

Place fillets on baking tray and cook for 10 minutes.

When ready the top should be brown and crisp and the salmon just cooked.

Spread lemon juice before serving.

Garnish with Basil or Parsley

Serve immediately.

An American variation (editorial liberty taken) to this recipe would be to place fish fillets on water soaked cedar wood plank and cook for 10 additional minutes, or until top browned and crusty.
