1/2 C. chopped rosemary, thyme and parsley
2 sweet potatoes, peeled and cut into chunks
1/4 C. brown sugar
1/3 C. maple syrup
2 pork tenderloins
Salt and Pepper
2 T. canola oil
1/2 C. butter

Directions:
Directions:
Season the pork with salt and pepper and sprinkle with the herbs. Saute the pork in a hot pan with the oil for 6 minutes on each side or until pork is just cooked. Let rest for 5 minutes before slicing. Place the sweet in an oven proof pan with the remaining ingredients, cover and bake at 350 degrees for 25 minutes or until tender. Arrange in center of plate and spoon the juices from the potatoes over the pork. ~Enjoy~
