1/2 lb andouille sausage
3 T EVOO
1 1/2 lbs ground chicken
1 1/2 lbs ground pork
3 ribs celery - chopped
1 lg. onion - chopped
1 green pepper - chopped
4 cloves garlic - chopped/ minced
4 T hot sauce (redhot or tabasco)
2 sprigs thyme
2 T chili powder
2 T cumin
2 T paprika
1 T cayenne pepper
3 c chicken stock
1 28 oz can crushed tomatoes
1 15 oz can tomato sauce
salt and pepper

Directions:
Heat EVOO in large Dutch oven pot and cook andouille sausage for 2 min. Add ground chicken and pork. Break up meat with wooden spoon and scrape the bits off the bottom. Continue to cook until meat is browned. Add celery, onion,green pepper and garlic, and cook for 3-4 min. Add hot sauce and all spices, chicken stock and tomatoes. Let simmer for 20 minutes. (the longer the better!) Serve with scallions and Fritos
