Strawberry Pie Recipe

3 - 5 egg whites
1/2 tsp. baking powder
1 cup sugar
20+ saltine crackers (crushed and rolled out very fine)
1/2 cup finely chopped walnuts
1 pint or more of fresh strawberries, sliced
Cool Whip or whipped cream

Directions:
Directions:
Beat the egg whites and the baking powder until stiff. Gradually add in the sugar. Then fold in the saltine crackers and the chopped walnuts. Butter a pie pan with butter or spray with Pam. Spread the mixture into the pie pan. Back at 300º for about 30 minutes. Let cool. (I usually make the pie the day before.) When ready to serve, top with the sliced strawberries and the Cool Whip or whipped cream. Save one whole strawberry to garnish on the top.

This recipe came from my neighbor in Marlton, New Jersey who was the Vice President of the Rusty Scupper Restaurant in Cape Cod, Massachusetts. This pie is great to travel with!
