3-5 # roast
2- 3 medium onions
4-5 medium potatoes
1 # small carrotts
2 bay leaves
salt and pepper
1 c. water
1 large crock pot

Directions:
Directions:
Salt and pepper the meat and sear meat on all sides in hot skillet. Place vegs. in crock pot and the meat on top of the vegs. Add water and cook on low setting of 10 hours or over night. Turn off and let meat and vegs. set for 1 hour. before serving (or less if you can't wait). The seceret to good tender roast is the searing and slow cooking.
