1lb. lean ground beef
½ c. each chopped onion & green pepper
1-24oz. jar salsa (2 ½ c.)
1-8 ¾ oz. can whole corn, drained
1t. each chili powder & ground cumin
10 corn tortillas (6in.), divided
2c. small curd cottage cheese
1c. shredded sharp cheese
1-2 ¼ oz can sliced olives

Brown meat, onion, & green pepper-drain. Add salsa, corn & seasonings. Layer 1/3 of meat sauce, ½ of tortillas, & ½ of cottage cheese in 13x9in. baking dish. Repeat layers, ending with meat sauce. Sprinkle cheddar cheese & olives on top. Bake at 375◦ for 30 minutes. Serves 8.

I usually serve this with other sides like salsa or refried beans, very good. This came from a recipe exchange when I had my wedding shower. I am still making it after 7 years!
