3lbs. precooked great white northern beans (in a jar)
2lbs. chicken
1T. olive oil
1 small onion, chopped
2 minced garlic cloves
2-4oz. cans of chilies
2t. ground cumin
1 ½ t. oregano
¼ t. red pepper
½ t. salt
6c. chicken broth
3 c. Colby-jack cheese

Boil chicken, drain, cool and dice. Heat oil on medium high. Cook onion, garlic, spices, and chilies in oil. Drain beans and put in large pot. Add broth and cooked garlic, chilies and spices to beans. Bring to boil. Add chicken and cheese. Simmer.

This is delicious, a favorite in the Fall. I serve with corn bread. I got this from a friend of mine several years ago who got it from her friend who is a pharmasist at a Kroger store. A customer left the recipe laying at the counter and my friend's friend took it home to try, the rest is history! We love it!
