1/4 tsp. pepper
4 (4-ounce) cube steaks
38 crushed saltine crackers (1 sleeve),
1 cup all-purpose flour
1/2 tsp. baking powder
1 tsp.salt
1/2 tsp. black pepper
1/2 tsp. red pepper
3/4 cup milk
2 large eggs

**Gravy**
1 Tbs. drippings and cooked bits
1/4 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
4 cups milk

SPRINKLE: 1/4 teaspoon salt &1/4 teaspoon pepper over 4 (4-ounce) cube steaks. Set aside.
COMBINE:crushed crackers, flour, baking powder, salt,black pepper,red pepper.WHISK TOGETHER: milk and eggs. DREDGE STEAKS:in cracker
crumb mixture; dip in milk mixture;and dredge in cracker mixture again. Firmly push the cube steak down into the cracker crumbs- the crumbs will fill the crevices and keep the steak from shrinking as it cooks.POUR oil into a 12-inch skillet; heat to 360º.(Do not use non-stick skillet.)FRY steaks 10 minutes.Turn and fry 4 to 5 minutes or until golden brown.(It's time to turn the steak when you see juice oozing out of the top). REMOVE to a wire rack placed on a cookie sheet pan.Keep steaks warm in a 225º oven.
**Gravy**
Carefully drain the hot oil, reserving cooked
bits and 1 Tbsp. drippings in the skillet. Whisk together:flour, salt, black pepper, and milk .POUR mixture into reserved drippings in skillet; cook over medium-high heat,whisking constantly, 10 to 12 minutes or until thickened. Serve with steaks.
