2 lbs. pork susage
1/4 cup drippings
2 Cups diced celery
1 large onion, diced
16 Cups bread cubes, toasted
4 eggs, slightly beaten
1/2 Cup milk
1/3 Cup minced parsley
1 1/2 tsps. thyme leaves
1 tsp. salt
1/2 tsp. pepper
1/2 tsp ground sage

Directions:

In 8 quart Dutch oven, cook 2 lbs. sausage meat. With slotted spoon, remove meat to a bowl; set aside. Pour all but 1/4 Cup drippings from Dutch oven. Add diced celery and onion; cook until tender, about 10 minutes, stirring occasionally. Remove Dutch oven from heat; stir in all remaining ingredients. Toss gently to mix well. Will stuff large turkey.
