1 t. oil, 1 chopped onion, 3 cloves chopped garlic, 3/4 c.rinsed quinoa, 1 1/2 c. vegetable broth, 1 t. cumin, 1/4 t. cayenne, salt and pepper to taste, 1 can corn, 2 15-ounce cans black beans (drained and rinsed), 1/2 c. chopped cilantro

Heat oil over medium heat. Stir in onion and garlic. Saute until lightly browned. Mix quinoa into saucepan and cover with broth. Season with cumin, cayenne, pepper and salt. Bring to a boil. Cover and reduce heat. Cook 20 minutes. Stir in corn. Cook 5 minutes. Mix in beans and cilantro.
