1 pkg. 6 inch corn flour tortillas
2-3 cloves garlic, diced
1/2 lb. hamburger
1 onion, diced
1 (10 oz.) can enchilada sauce
1 fresh tomato, diced (can use canned tomatoes)
Shredded cheese
Cooking oil

Directions:
Directions:
In a medium skillet, cook hamburger, diced garlic and diced onion. Set aside. Heat enchilada sauce on low in a small saucepan. Heat 1/2 inch oil on low in saute pan or small frying pan. Fry tortillas in oil to texture desired (not crispy). Dip tortilla into warm enchilada sauce and then place in lightly greased baking dish or pie pan. Sprinkle with hamburger mixture, diced tomato and cheese. Repeat layers 3-4 times. Pour any remaining ingredients over stacks and place in pre-heated 350º F. oven for 15 minutes or until cheese is melted. Serve with eggs fried in remaining oil from tortillas. Makes two stacks.
