Pumpkin Roll Recipe

Roll: 3 eggs
1 c sugar
3/4 c canned pumpkin
3/4 c plain flour
1 tsp soda
2 tsp cinnamon
10 x sugar for dusting.

Filling: 1 c 10x powdered sugar
8 oz cream cheese
4 T butter melted
1/2 tsp vanilla

For the Roll, Beat eggs for 5 minutes then add other ingredients, mix well and pour onto a greased cookie sheet. Bake at 350 degrees 12 to 15 minutes. Cool for 5 minutes, dust with 10 x sugar, cover with waxed paper, roll up in paper and refrigerate for 1 hr. For the filling, mix 1c 10x sugar, cream cheese, butter, & vanilla. Remove Roll from refrigerator, unroll & spread the filling over the top and roll up & keep in the refrigerator
