1 lb fresh beets
1 small onion
1 qt water
1 T salt
1 T sugar
1 T lemon juice
2 eggs
sour cream

Directions:
Directions:
Peel beets and onions and cut into chunks. Put in saucepan with water and cook one hour. Drain (save liquids) and work vegetables through your blender. Season with salt, sugar, and lemon juice. In a separate bowl, beat eggs, add hot beet liquid and beat soundly for 1 minute. Stir in ground beet mixture and chill. Serve cold with a dollop of sour cream on top.
