Hearty Vegetable Soup Recipe

3 lbs beef shank, cut in 1-inch slices
2 T fat
6 c water
2 c tomato juice
1/3 c coarsely chopped onion
1 T salt
2 tsp Worchestershire sauce
1/4 tsp chili powder
2 bay leaves
1 c diced celery
1 c sliced carrots
1 c diced potatoes
1 c chopped cabbages

Cut meat into bite-size pieces; brown in hot fat. add the bones, water, tomato juice, onion, and seasonings. Cover and simmer 2 hours; add vegetables, cover and simmer 1 hour. Remove bones and bay leaves before serving. Serves 8
