5 T. Extra virgin olive oil.
4 Cloves garlic, peeled and crushed.
2 Sprigs parsley, one whole and one minced.
1 lb. of fresh tomatoes.
1/2 c. Loosely packed basil.
1/3 c. Red wine.
1 Sprig of basil for garnish
Salt and pepper to taste

In a skillet, place oil and heat under low heat.

Add 1 garlic and 1 sprig of parsley.

Cook briefly and remove garlic and parsley after about 1 minute.

Add tomatoes and wine and cook uncovered for 10 minutes, stirring often...bring to a low simmer/boil.

Chop basil and remaining garlic cloves, and add to sauce.

Add salt and pepper...Cook for 10 more minutes, stirring often.

Remove from heat and add pasta to sauce in skillet...mix well and serve with Basil garnish.

Quick and simple, this is one of the rustic sauces with a tangy lush flavor that is great for Lasagna, spaghetti or linguine. Great sauce for lasagna! You really need ripe, flavorful fresh plum tomatoes. However, in the winter you can use caned peeled tomatoes to which you add 1/2 can of tomato paste. Cherry tomatoes are also good since they seem to retain a fresh flavor all year round.
