Marinated "Flank Steak" Recipe

1 1/2 lbs. Flank steak.
1/3 c. Minced shallots.
3 T. Soy Sauce.
1/2 c. Extra virgin olive oil.
2 tsp. Dried thyme or 3 T. fresh thyme.
2 Dashes of hot or Tabasco sauce
3 T. Fresh lemon juice
1/4 tsp. Red pepper flakes
Salt/pepper to taste

Mix the marinade ingredients in non reactive deep dish.

Turn steak out on cutting board and puncture each side with point of knife.

Place steak in marinate, and turn every 1/2 hour for at least two hours if out of refrig. Can marinate in refrig. up to 24 H if placed in refrig, but don't forget to turn several times. I prefer in refrig...steak edges may turn gray...that shows enzymes are tenderizing meat.

Place steak and some of its marinate, on pre heated BBQ or grated grill High (Heat 400 degrees) for two minutes each side until well seared.....keeps juices in.

Lower heat to medium and continue to cook for 4 minutes each side for medium rare....more if you like it well done, but it's against Ralph's law to cook this any more than medium/rare!

Remove and let rest for 5 minutes, and cut thin slices diag. against grain. Serve and feast.

Goes great with roasted rosemary cubed potatoes and lemon/asparagus.

Can't beat this steak when combined with sautéed peppers and onions in a real Italian Bread sandwich with the middle of the bread gutted out...nice and crispy bread....none of the soft hoagie bread.
