1 Ib ground beef
1 cup onion, chopped
1 cup bell pepper, chopped
1 tbsp butter
1 can jalapeno black eye peas
1 can rotel tomatoes, diced
1 pkg Jiffy cornbread mix
1 cup cheddar cheese, grated

Directions:
Directions:
In large skillet, suate onions and bell pepper in butter. Add ground beef and brown. Stir in peas and tomatoes. Allow to simmer. Prepare cornbread mix per package instructions and set aside briefly. Spread grated cheese over top of meat mixture. Spread cornbread over top of casserole. Bake at 400 degrees for 15 to 20 minutes or until cornbread is done.
