1 1/2 lbs Ground Chuck
Salt to taste
1 1/2 to 2 tbsp crushed peppercorns
2 tbsp butter
1 tbsp finely chopped shallots
1/4 c dry red wine
1 tbsp cognac
1/4 c beef broth
2 tbsp finely chopped parsley

Directions:

Shape meat into equal size patties. Sprinkle with salt. Sprinkle all over with crushed peppercorns. Press meat to help adhere.

Heat heavy iron skillet (do not add any kind of fat). When skillet is very hot add patties. Cook 5 minutes on each side.

Remove patties to warm platter. To skillet add 1 tbsp of butter and shallots. Cook stirring with wooden spoon until shallots are wilted. Add wine, cook for 1 minute. Add Cognac and let reduce to half. Add broth and cook until reduced to about 3 tbsp. Swirl in remaining butter. Return patties to skillet, turning once with heat off. Garnish with chopped parsley.
