"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
Tomato Sauce as usual.
1 or 2 containers of cottage cheese with egg
1 container ricotta cheese
Cooked spinach
2 pounds or more of cut mushrooms
Mozzarella cheese(thinly sliced)
Parmesan Cheese (grated)

Directions:
Directions:
Mix 1 container of ricotta cheese to 2 containers of cottage cheese with egg. Mix with some cooked spinach. Cook with 2 pounds or more of cut mushrooms

Cook lasagne noodles 4 to 5 minutes. Do not overcook because this will bake in oven later. Drain and keep in cold water to build your lasagne.

Butter a 9x 13 inch baking dish. Spread a thin layer of sauce over the bottom. Arrange noodles in an even layer over sauce. Spread some sauce over noodles & dot with ricotta cheese. Add some cooked sausage and mushrooms. Sprinkle with parmesan cheese. Add sliced mozzarella. Cover with some sauce.

Repeat this layer, but layer lasagne cross ways, repeating filling, etc.

If pan is full, just add tomato sauce. Bake in 350 to 400º oven until hot and bubbly. Cook approximately 1 hour or more until a fork goes thru it easily.

Personal Notes:
Personal Notes:
Let cool a few minutes before serving into squares. P.S. You can make Vegetable Lasagne by using vegetables instead of meat.
