Ingredients:
Cookies:
1 cup butter
1 1/2 cups powdered sugar
1 egg
1 tsp. baking soda
2 1/2 cups flour
1 tsp. vanilla
1/2 tsp. almond extract
1 tsp. cream of tarter

Cream butter and powder sugar. Add egg, vanilla and almond extract. Blend in flour, baking soda and cream of tarter by hand with spoon. Cover and refrigerate for an hour or two. Heat oven to 375º.

Take handfuls of dough and roll (you can roll them as thin or thick as you’d like, but if you roll them thicker you probably will have to adjust the cooking time) on lightly floured cloth covered board.

Cut out with different shapes and bake 7 to 8 minutes (for thinly rolled cookies) or until lightly browned.

Lebkuchen Vanilla Butter Frosting
1/3 cup soft butter
1/2 tsp. vanilla
3 cups powdered sugar
2 tsp. milk

Blend butter and sugar. Stir in vanilla and milk. Beat until smooth with electric mixer. *You may have to add more milk to get to the consistency you want. *Butter is preferred over margarine.

A recipe from Bob & Heather’s preschool teacher who said it was an old Swedish recipe handed down for generations – ever since the first time I made them they have been our family’s favorite and Heather insists we make them every Christmas.
