3 eggs (well beaten)
2-1/4 c. sugar
3 tsp. vanilla
1 c. vegetable oil
2 c. shredded zucchini
3 c. flour
¼ tsp. baking powder
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1 c. nuts or raisins (chopped)
1-2 tsp. cloves (ground)

Beat eggs until light and fluffy. Add sugar, oil and vanilla. Blend well. Stir in zucchini. Sift dry ingredients and blend into creamed mixture. Fold in nuts. Bake in 2 greased and floured loaf pans in 350º oven. Cool then unmold.
