1 can ( ounces) DOLE Pineapple Tidbits in juice
1 T. sugar
1 T cider vinegar
1 1/2 tsp. cornstarch
1/2 tsp. instant chicken bouillon granules
1/4 tsp. ground ginger
Pinch ground red pepper (I use pepper flakes)
1/4 c. sliced green onions
1/4 c. sliced water chestnuts
2 T. cilantro
4 white fish fillets
2 T. margarine, melted (or olive oil)
1/2 cup bread crumbs

To microwave: Drain pineapple; reserve juice. For sauce, add enough water to juice to make 2/3 cup liquid. In microwave bowl, whisk together juice mixture, sugar, vinegar, cornstarch, bouillon, ginger and red pepper. Microwave on HIGH 4 to 5 minutes, until sauce boils and thickens, whisking after 2 minutes to prevent lumps. Stir in green onions, water chestnuts and pineapple; set aside.

Fish: Drizzle oil over fish, spread bread crumbs on top, sprinkle with paprika. Microwave about 5 minutes or until fish is flaky.
