Ingredients: 3 to 4 c all-purpose flour 2 tbsp sugar 1 pkg (1/4oz) active dry yeast 1 tsp salt 1/2 c fat free milk 1/2 c water 2 tbsp canola oil 2 egg whites, divided 1 egg 1 lb fresh asparagus, trimmed & cut into 1/2in pieces 1 block (4oz) reduced fat cheddar cheese, cut into 1in cubes 2 c diced fully cooked ham

Directions:Combine 2 1/2 c flour, sugar, yeast, and salt. I sauce pan, heat milk, water, & oil to 120-130 degrees. Add dry ingredients, heat until moistened. Add one egg white & egg, beat until smooth. Stir in enough remaining flour to form soft dough. Turn on floured surfuse. Knead untl smooth & elastic, approximately 6-8 min. Place in greased bowl, turn once to grease top. Cover & let rise in a warm place until doubled, approximately 1 hr. Punch dough down. Turn lightly floured surface. Cover & let stand, 15 min. Meanwhile, place 1/2in of water & asparagus in saucepan, bring to a boil. Reduce heat, cover & simmer for 3-5 min, drain. Divide dough into 24 pieces. Roll each piece into a 5 in circle. Place a few pieces of asparagus, a cheese cube & 1 tbsp of ham in the center of each circle. Wrap dough around filling, pinching seams to seal. Place rolls, seam side down 2 in apart on baking sheets coated with nonstick spray. Cover & let rise in a warm place until doubled, about 30 min. Beat remaining egg white. Brush over rolls. Bake 350 degrees for 18-20 min or until brown. |
