7 lb 1/8 inch slices cucumber
5 lb. sugar
2 gal lime water
5 pt vinegar
1 tsp cloves
1 tsp ginger
1 tsp allspice
1 tsp celery seed
1 tsp mace
1 tsp cinnamon

Directions:
Directions:
Soak cucumber slices in lime water for 24 hours (for lime water 3 cups lime in 2 gal. water) Lift cucumber out of lime water & rinse well, then soak in plain water for 4 hours changing water every hour. Drain well. Make syrup with sugar, vinegar & spices tied in cloth. Bring mixture to a boil. Pour hot syrup over cucumber & let stand overnight. Next morning boil all together for 1 hour stirring often so as to cook evenly. Put in sterilized jars and seal. Makes 12 pints.
