4 salmon steaks
1 T. olive oil
¼ tsp. dried dill
salt and pepper to taste
1 c. vegetable broth
1 medium cucumber
¼ c. onion (chopped)
2 T. white wine vinegar
1 tsp. sugar
½ tsp. salt
2 T. fresh parsley (chopped)

Peel cucumber and slice in half lengthwise. With a small spoon, scoop seeds out of center and discard. Dice cucumber and combine with remaining relish ingredients and mix well. Cover and refrigerate at least 1 hour. Place fish in glass pan, brush with olive oil and sprinkle with dill weed, salt and pepper. Pour in vegetable broth. Bake 20 minutes in a 400º oven. Serve with cucumber relish.
