Ingredients:  
1- 1 1/2 pounds hamburger browned or 2 big cans canned chicken or leftover chicken/turkey
1 can cream of mushroom soup
1 can mild or medium enchilada sauce or green chile sauce if you want it very mild
( if you can't find medium and you like it spicy, mix half a can of hot and half mild)
3 c. cheddar and Monterey jack cheese grated or you can use grated cojack.
8-12 medium flour tortillas

Mix soup and sauce, add 1/2 c. to hamburger or chicken. Add 1 c. cheese to hamburger or chicken. Roll mixture in tortilla. Place in greased baking dish seam side down. Top with remaining sauce and cheese. Bake at 350º for 25 min covered. Uncover and broil until cheese is browned (about 5 to 10 minutes). Serve with shredded lettuce, tomato and sour cream.

Note: With two cans of canned chicken, I can fill a 9x13 with 12 tortillas–10 in a row and two along the side.
