3 Tbsp onion, minced
2 Tbsp carrot, grated
3 Tbsp margarine
3 cans chicken broth, undiluted
1 can water
½ tsp. paprika
½ tsp. dry mustard
3Tbsp cornstarch
½ cup milk
1 cup mild cheddar cheese
1 cup beer
Parsley, chopped

Directions:
Directions:

Cook onion and carrot in melted butter over low heat until tender, Approximately 10 minutes.
Stir occasionally.
Add chicken broth, water,Dry mustard and paprika.
Cook over low heat another 15 minutes.
Blend cornstarch and milk. Slowly stir into soup. Add grated cheese and Beer,
stirring until cheese is melted.
Top with parsley
