1 12oz. pkg of rice chex
1 12 oz. pkg of corn chex
1 12 oz. pkg of crispex
1 lb. each of pecans, almonds and cashews

Caramel Coating Mix
1 lb. butter
2 lbs. brown sugar
1 c. white corn syrup
1 tsp. salt

Directions:
Directions:
Mix the cereals and nuts together in large roaster
Combine ingredients in saucepan for topping, bring to a boil, simmer for 5 min; remove from heat, add 1 T. vanilla, pour over cereal. Stir carefully, coating all the cereal. Bake at 200 degrees for an hour; Cool on waxed paper. Store in tight containers or plastic bags.

(Note from Louise–I couldn’t make this work with my large roaster and cover. It all clumped together, so I made a half recipe at a time. Ask Helly or Ann for the secret of fitting all this into a large roaster.)
