Zest of 1 lemon
1 tablespoon fresh dill, chopped
1 tablespoon olive oil
2 1/2 cups coarse salt
1 1/2 pounds salon fillet, center cut

Directions:
Directions:
In a bowl, stir together the lemon zest, dill and olive oil. Rub the salmon with the mixture and marinate in the refrigerator for 1 hour. Preheat oven to 350 degrees. Place 2 cups of the salt on a baking tray. Lay the salmon on top and pound the remaining salt over the fish, completely encasing it. Bake for 15 to 20 minutes for medium-rare to medium, or longer if desired. When salmon is done, remove the salt with a knife or spoon.
