2 C flour
2 tsp baking powder
1/2 t baking soda
1 t each; cinnamon, cardamom & ginger
1/2 t each; salt & nutmeg
1 C canned solid packed pumpkin
1 C sugar
1/2 C milk
2 eggs
1/4 C cooking oil
1 C pecans, chopped

Preheat oven to 350. Grease and flour, or spray with cooking spray, a 9x5 loaf pan. Mix all wet ingredients in a bowl. Mix dry ingredients in a separate bowl. Combine wet and dry ingredients until just blended and still lumpy. Do not over mix. Pour into prepared pan and bake for 65 minutes or until toothpick inserted in the center comes out clean. cool 10 minutes and invert to remove from pan.
