1/2 C white rice
1/2 C wild rice
5 1/2 C chicken broth
4 sliced green onions
1/4 C chopped fresh (or dried) mint
grated rind of one orange
1 C yellow raisins
1 C chopped pecans
1/4 C olive oil
1/2 C orange juice concentrate
salt and pepper to taste (if desired)

Directions:
Directions:
In a pot bring the chicken broth to a boil. Add wild rice and simmer uncovered 30 minutes. Add white rice and continue to simmer 15-20 minutes. Rice should not be too soft. Drain. Mix together remaining ingredients and gently stir into cooked rice. Let stand at room temperature for 2 hours or refrigerate for approximately 8 hours before serving.
