1(16oz)pkg. frozen broccoli & cauliflower mixed
1 small onion, chopped
8 T.butter, meleted & divided
1 c. rice, cooked
1(10 3/4oz) can cream of mushroom soup
1/2 c. milk
3/4 c. chedar cheese, shredded
2 c. bread crumbs

Directions:
Directions:
Cook broccoli and cauliflower in a little boiling water for about 6 minutes.

Saute onion in 4T. of butter.

In a bowl mix rice, soup, milk, cheese, onion, broccoli and cauliflower together. Put in a 2 quart casserole.

In a bowl combine bread crumbs and remaining melted butter together and top casserole with the crumbs.

Bake uncovered at 350º for 25-30 minutes

This is a good side dish but some times I add 1 or 2 cooked chicken breast to make it a complete meal. So yummy!
