Swan Cake Recipe

2 1/4 c cake flour
1 3/4 c sugar
2 tsp baking powder
1/2 tsp salt
1/2 c oil
7 egg yolks
3/4 c orange juice
2 tsp grated orange peel
2 1/2 tsp orange extract
1 tsp vanilla
10 egg whites
1 tsp cream of tartar
1 (8oz) pkg cream cheese
2 tbsp milk
1 c butter
8 c powdered sugar
2 tbsp orange juice
1 tbsp orange extract

Preheat oven to 325. Combine flour, sugar, baking powder and salt in large mixing bowl, blend at low speed 1 minute., Make well in center of dry ingredients and add oil, egg yolks, orange juice, orange peel and extract. Beat till smooth. In another large bowl, combine egg whites and cream of tartar. Beat until soft peaks form. Fold eggs into 1st mixture. Pour batter into 3 greased 9 inch round cake pans lined with waxed paper. Bake 25-35 minutes. Cool 10 minutes Remove cakes and cool completely. Frost.
