Directions:
Directions:
Place the roast in roasting pan and sprinkle with salt and pepper. Roast in 325º oven until internal temperature is:
140º rare—1 ¾- 2 ½ hrs
160º med—2 ¼- 3 ½ hrs
170º well—2 ¾ -4 hrs
Let stand 15 minutes before carving.
